Have just discovered, late in life, the joys of Colby cheese. Previously I thought of it only as a fictional second division football club ("Colby Cheese one, Partick Thistle nil."), but if you want the endorphin rush of milk fat solids unencumbered by flavour, Colby should be your go-to cheese.
